Edam cheese like no other, made by Jake and Jesse Rosevear at Mahoe Farmhouse Cheese, Oramahoe, near KeriKeri in Northland. Aged approximately 18 months these are sweet and citrusy, flavours akin to mountain cheeses from the Jura. Made with pasteurised cow's milk and vegetarian rennet.
