How should I look after my cheese?
Cheese should be bought every week and stored, wrapped in grease proof paper, in an airtight plastic box in the fridge. An old ice cream container or Tupperware box is ideal for this. Fridges are great for preserving cheese, and a sealed box will allow it to breathe without drying out. The wrappings should be changed after 3 or 4 days and, ideally, the cheese all used up within a week.
Keep in mind that it is important to allow your cheese to come to room temperature before eating; given a little time, it will soften and reveal its true flavour. However, lots of temperature change is not good, so take out of the fridge only what you think you will need for that sitting. If you don’t have a box, then it will sit happily in the vegetable or salad compartment, though check to make sure that it’s not dry, especially if there’s not much produce to keep it company.
Remember – a cheese shop is the best place to store cheese, buy enough to last up to a week and return regularly.
