Blue Rhapsody

Creamy, meadium blue cheese from Ade and Jill Walcroft at Cartwheel Creamery,  Pohangina, Manawatu. Sweetens with age but retains a gentle curdiness. Made with pasteurised cow's milk and vegetarian rennet.
