Chunkier and a bit firmer than traditional brie with a markedly varied flavour/texture as a result of season and make. Cheeses can have a fresh lactic sourness and a sweet, creamy (and sometimes strong/funky) flavour. From Pablo and Colleen Dennison at Evansdale Cheese in Waikouaiti, North Otago. Made with pasteurised cow's milk and vegetarian rennet.
