Firm, salty, rindless cooking cheese from Jill and Ade Walcroft at Cartwheel Creamery in Pohangina, Manawatu. Should be sliced into slabs and grilled or fried until golden brown, and dressed with olive oil and lemon juice. 180 - 200 gram packs. Made with pasteurised cow's milk and vegetarian rennet.
